Currently, I can select only the projects as favorite which are listed under My Workspace.
When I click on more or show all projects, I don't have the option to select the project as favorite.
This would be very beneficial, because I often need to select projects where I have viewing right but no role in it

We have raised this as a bug longer time ago. Would be great if bugs would be fixed then we could focus on real enhancements. But clearly you get my vote;).
We will try to get this addressed in TF 21.2 (Q3 2021 release)
This request has been addressed in TF 21.2. Details below
- Ability to ‘Add to Favorite’ or ‘Remove from Favorite’ within “All Projects” view
- Multiple projects can be selected to Add to / Remove from Favorites
- Projects that are marked as Favorite will have a star next to the project name
